A Pinot-Laced Piquette Style Beer Born in Central Otago
This one’s for the wild ferment fans, the grape skin saviours, and anyone who loves their craft beer with a splash of wine country.
We’re stoked to release the 2025 vintage of To Central With Love, our second collab with the legends at Carrick Winery. This year’s drop is bigger, bolder and packed with Central Otago character.
Inspired by piquette style wine, traditionally made by refermenting leftover grape skins with water and yeast, we’ve given it the Canyon twist. Take an oak-aged base beer, then referment it on biodynamic Pinot Noir skins from Carrick’s 2025 Billet Doux harvest. The result? Something entirely new that sits somewhere between barrel-aged beer and natural wine.
So, what does it taste like?
Juicy hits of red fruit and blackcurrant upfront thanks to the Pinot grapes, followed by a subtle earthiness from the oak barrels and a gently tannic finish. It’s layered, tart and refreshingly dry. Perfect for those chasing complexity beyond the pale ale.
A beer with roots (literally)
Our Queenstown brewery has always done things a little differently and this one’s no exception. By teaming up with Carrick and reusing grape skins that would otherwise go to waste, we’re pushing the boundaries of what sustainable brewing can look and taste like. It’s bold, it’s creative and it cuts down on waste.
This ongoing partnership with Carrick is something special. It’s a cross-industry experiment in flavour, farming and fermentation. A wine lover’s craft beer. A beer lover’s wine moment.
