The menu at Canyon just got a winter uniform change. Whether you're stopping in after the Shotover Jet, mid-hike, or just because you needed a cold one and ended up staying for dinner, here's what's waiting for you.
Start Here (Seriously)
Start with the cheese croquettes. Layered on Muhammara - that smoky Syrian pepper dip - and topped with grana padano. These are pub snacks that deliver.
The fried chicken with Sichuan caramel and crispy shallots is the kind of thing you order thinking it'll be a side note and then half the table is trying to steal it.Â
And yes, we've got Brussels sprouts on the menu - before you scroll past, they come with agrodolce raisins and grana padano, and they're the thing the vegetarians at the table end up fighting over.

Pick One. Actually, Pick Three.
Three options of skewers: chipotle mushrooms with parsley salad and charred onion, peri peri chicken with toum, or lamb kofta with sauce au poivre. All three come with that charred onion hit that ties it together.Â

Things Worth Staying For
The smash burger is exactly what it should be. Proper special sauce, cheddar, brioche and shoestring fries.Â
The char siu pork ribs with celeriac remoulade might be the dark horse of the new additions. The celeriac cuts through the richness of the ribs in a way that keeps you going back. It's the kind of dish that makes you realise you've eaten the whole thing while holding your breath.Â
And the chicken parma - ham, buffalo mozzarella, vodka sauce - is comfort food, elevated, in true Canyon fashion.

The Wood Oven Has Been Busy
Two new additions to the wood-fired lineup:
The miso mushroom pizza comes with confit garlic, stracciatella, parsley, and nori. It's umami-forward, a little unexpected, and genuinely hard to stop eating.Â
The pork sausage pizza with spinach saag, crispy kale, and grana padano is the one for people who think they don't like pizza with greens on it. The saag base is the difference - it's warm, spiced, and works with the sausage instead of fighting it.
